Obesity and Eating Disorder Recovery Recipe: Apple Crisp

In my experience, clients that are in treatment for bulimia, binge eating disorder, anorexia or bulimarexia are typically faced with an increased risk of inadequate nutrition. To this end, I try to provide my clients and readers nutritious and delicious recipes to enjoy both during and after their recovery journey at ‘The Norton Center for Eating Disorders & Obesity’.

Eating healthy can be quick and easy once you get the hang of it. The key is in the planning. When you get into the habit of having the right ingredients on hand, meal preparation is a breeze, not a source of agony.

Eating Disorder Recovery: Apple Crisp

BAKED APPLE CRISP

Filling Ingredients*

  • 5 granny smith apples – peeled, cored, quartered, and cut into 1/4-inch slices.  Toss sliced apples with lemon juice from ½ lemon to prevent browning.
  • 1/2 cup grassfed butter
  • 2/3 cup coconut crystals sugar
  • 1 tsp. each cinnamon, nutmeg
  • ½ tsp. ginger (optional)
  • 1 Tbsps. Water

Directions for Filling

Melt butter in a large skillet over low heat.

Stir in sugar and spices until sugar begins to dissolve, 3 to 4 minutes.

Add apples and enough water to prevent sticking; continue cooking and stirring until apples soften and are coated with sauce, 4 to 5 minutes.

Topping Ingredients*

  • 1/2 cup coconut flour
  • 1 cup organic rolled oats or 1/2 cup hulled hemp seeds
  • ½ cup coconut crystals sugar
  • 1 tsp. each cinnamon, nutmeg
  • ½ tsp. ginger (optional)
  • 1 beaten egg
  • ½ cup grass-fed butter

Directions for topping:

Mix dry ingredients (flour, rolled oats, or hemp, sugar and spices) together in a large bowl. Toss in beaten egg and melted butter. Toss until well blended.

Pour apples and sugar mixture into a 2 quart baking dish. Sprinkle topping evenly over the apple filling.

Preheat the oven to 375 degrees F (190 degrees C).

Bake in the preheated oven until the top is browned and the filling is bubbling up around the edges, 25 to 30 minutes. Cool for 10 to 15 minutes and serve with full fat cream, milk, whipped cream or a scoop of Jeni’s Splendid Ice Cream, which is made with grass-fed cream.

Serves 8.

*All ingredients should be organic when possible.

Nutrition Info (without Ice Cream)

Using Hemp Seeds – 450 calories, 32 g of fat, 6 g of protein, 36 g of carbs, 7 g of fiber

Using Oats – 435 calories, 28 g of fat, 4 g of protein, 44 g of carbs, 8 g of fiber

Substitutes

You can substitute Jovial Foods Ginger Spice Cookies for the flour and oats, by either putting them into a food processor (which makes this a very quick recipe) or rolling them out between two sheets of waxed paper or parchment paper.  If you use the food processor, throw the rest of the ingredients in to finish blending the topping.

To make this even more of a Thanksgiving dish, you can add cranberries.  I like to buy them fresh and cook them into a compote,  using a cup of the coconut sugar and enough water to cover the cranberries. Then just substitute 1 cup of the cooked cranberries for 2 of the apples.

Mashed Cauliflower

  • 8 cups bite-size cauliflower florets (about 1 head)
  • 2-4 capfuls garlic juice
  • 1/2 cup Kalona cottage cheese or any organic, grassfed cottage cheese
  • 4 teaspoons extra-virgin cold pressed organic coconut oil
  • 1 tablespoon grass-fed butter
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste
  • Snipped fresh chives for garnish (optional)

The easiest way to grate cauliflower is to do it in a food processor using the grating blade. If you do not have one, a cheese grater works. The idea is to use as much of the head as possible.  It should look like snow when you are done.

Place grated cauliflower into a microwaveable, covered dish. Do not add water. Microwave cauliflower for 3 minutes and drain well.

Place the grated microwaved cauliflower and the above ingredients in a food processor. Pulse several times, then process until smooth and creamy. Transfer to a serving bowl. Drizzle with butter and garnish with chives, if desired. Serve hot.

Serves 6.

This recipe for quiche has a cauliflower crust that is awesome, and it is loaded with good fat and gluten free!

Gluten-free Bacon (or Mushroom) Quiche Crust

Ingredients:
2 cups grated cauliflower* (Use stems of florets, but not green parts The easiest way to grate cauliflower is to do it in a food processor using the grating blade. If you do not have one, a cheese grater works. The idea is to use as much of the head as possible.  It should look like snow when you are done.)
2 eggs
1 cup organic coconut flour
a pinch of salt, pepper, italian herbs
1/2 c shredded organic, grassfed mozzarella or provolone cheese (grate your own please)
1/2 c grassfed butter
1/2 Trader’s Point Whole Milk, or any raw/lightly pasteurized, organic, grassfed milk
1 cap of garlic juice

  1. Microwave cauliflower for 3 minutes and drain well. Do not add water! Let it cool completely.
  2. Now you have to wring it out – if you don’t,  it won’t work! Just put it in a clean dish towel and squeeze out the excess liquid.
  3. Mix all remaining ingredients with cauliflower to form the dough.
  4. Form into a ball and roll out or simply press it into a 9″ glass pie dish.

Bacon (or Mushroom) Filling

8 ounces bacon, cut into 1/2-inch pieces (or 1 cup diced mushroom caps plus butter for sautéing)
1/2 onion, diced
Salt, pepper, Bourbon-smoked Paprika
1 cap garlic juice
6 large eggs
1 cup Trader’s Point full-fat milk (or Snowville heavy cream), or raw/lightly-pasteurized organic grass-fed milk/cream
1 cup shredded cheese

  1. Preheat the oven to 400 degrees. Bake pie shell for 8 minutes. Remove from the oven; lower the temperature to 325 degrees.
  2. Meanwhile, in a large skillet, cook the bacon (or mushroom in grass-fed butter) over medium heat, stirring often, until crisp, about 5 minutes; using a slotted spoon, transfer to paper towels to drain.
  3. Add the onion and 1/2 teaspoon each salt and pepper as well garlic juice to the bacon fat in the skillet and cook over medium heat, stirring occasionally, until softened, 3 or 4 minutes. Transfer the onion to the baked pie shell.
  4. In a large bowl, beat the eggs with the cream using a mixer; stir in the cheese (sautéed mushroom) and the cooked bacon.
  5. Pour the mixture into the pie shell. Bake until set, about 40 minutes. Let stand for 10 minutes before slicing.

Makes 8 servings.

Bacon Quiche – one serving – (made with full fat milk) – 495 calories, 40 g of fat, 18 g of protein, 15 g of carbs, 6 g of fiber

Mushroom Quiche – one serving – (made with full fat milk) – 410 calories, 32 g of fat, 15 g of protein, 14 g of carbs, 6 g of fiber

Clean Eating Recipe: Chicken, Green Bean, and Mushroom Soup

I made THE most delicious soup yesterday! It only took five minutes  to make and clean-up was a breeze!

How’d I make it? I started by sauteing some mushrooms in coconut oil. Next, I added in some sliced up leftover cooked organic chicken breast that was seasoned with basil, garlic, and sea salt. Once the mushrooms were cooked and the chicken was slightly browned, I added in some cooked organic green beans and bone broth. I let it simmer for a few minutes to allow the flavors meld together.

The results were incredible! It was satisfying and the flavor was divine! I heated up the leftovers for lunch today, and it was even better!

Clean Eating Recipe: Strawberries and Coconut Palm Sugar

Strawberries and Palm Sugar

If you’re looking for an easy, yet delicious dessert recipe, look no further! This delicious dessert can be prepared in a matter of minutes and only contains two ingredients – organic strawberries and organic palm sugar! Strawberries dipped in Coconut Palm Sugar. Both of these ingredients are fantastic on their own; combining them is a recipe for success!

This recipe is particularly useful for my patients that are in recovery for an eating disorder, since it doesn’t require much time in the kitchen…a place that can cause anxiety for those in early recovery.

As we discussed in an earlier blog post, organic coconut palm sugar has many health benefits, including:

  • Palm sugar is non-GMO, 100% organic, and unrefined
  • Palm sugar is rich in vitamins and amino acids
  • Palm sugar has a low glycemic index

Strawberries are an antioxidant-rich food; they are ranked the 4th best fruit in terms of antioxidant capacity. As we talked about in my article about premature aging, antioxidants are a key element in slowing down the aging process. Antioxidant-rich foods also help in replenishing vitamins and minerals within the body, supporting the immune system, improving mental function, and restoring energy. These are all very common issues that my patients experience upon entering treatment for their eating disorder.

Clean Eating Recipe: Coconut Oil Mayonnaise

Coconut Oil Mayonnaise

4 eggs yolks (room temperature)
2 tbsp + 2 tsp macadamia nut oil
1 1/2 c cold-pressed, unrefined coconut oil
2 tbsp + 2 tsp white wine vinegar
lemon juice (from 1/2 lemon)
garlic salt + salt (to taste, I use a total of about 1 tsp of both salts combined)

In food processor, add egg yolks, blend.
After completely processed, with processor still running, stream in macadamia nut oil slowly.
After blended add in coconut oil (1/2 c at a time), blending.
Add in white wine vinegar, lemon juice, garlic salt and salt. Blend.

Makes about 2 cups, or 32 servings (1 tbsp)

Nutrition (approx. 1 tbsp): 110 calories, 12 g fat, 0 g protein, 0 g carbs

Recipe: Mushroom Gravy

Mushroom Gravy

1 quart of mushrooms, cleaned and dried
2 tbsp of grass fed butter or ghee
1 cup Snowville Whipping Cream
garlic salt, garlic pepper
bourbon smoked paprika, to taste
1 tbsp organic corn starch (or other organic thickener)

Sautee mushrooms in butter or ghee. Add garlic pepper, garlic salt, and paprika.
When mushrooms are golden, add 1 cup of full fat snowville whipping cream.
Stir on medium heat until bubbly.
In the mean time, make a paste out of cornstarch and water.
Add to gravy mixture until you get the right consistency.

Serves 10.

Clean Eating Recipe: Mayonnaise

As I mentioned on Tuesday night’s podcast, the mayonnaise on grocery store shelves are filled with food additives and unhealthy fats. As a result, I always make my own mayonnaise. I’ve received several requests for my recipe, so here it is! Enjoy!

Homemade Mayonnaise

2 egg yolks (How to Choose Healthy Eggs)
2/3 c macadamia oil (Why I use this oil)
1/4 white vinegar
sea salt, to taste
garlic salt, to taste
1 tsp coconut palm sugar (Why I use coconut palm sugar)
1 tsp lemon juice

Mix egg yolks in food processor.
Blending slowly, slowly stream in macadamia oil, add vinegar, lemon juice, coconut crystals, spices.
Refrigerate.

Serves 20.

Nutrition: 70 cal, 8 g fat, 0 g protein, 0 g carbs, 0 g fiber
