Obesity and Eating Disorder Recovery Recipe: Seasoned Mixed Nuts

In my experience, clients that are in treatment for bulimia, binge eating disorder, anorexia or bulimarexia are typically faced with an increased risk of inadequate nutrition. To this end, I try to provide my clients and readers nutritious and delicious recipes to enjoy both during and after their recovery journey at ‘The Norton Center for Eating Disorders & Obesity’.

Eating healthy can be quick and easy once you get the hang of it. The key is in the planning. When you get into the habit of having the right ingredients on hand, meal preparation is a breeze, not a source of agony.

We recently started offering cooking classes in Cincinnati to patients that are in treatment for obesity, and eating disorders such as anorexia, bulimia, bulimarexia, and binge eating disorder. During the classes, participants pick up basic cooking tips for preparing “clean” luscious tasting dishes, dressing, marinades, desserts and soups.

Organic, raw nuts, mixture of your choice* (enough to fill a 16 oz mason jar)

2 tbsp organic, unrefined, cold-pressed coconut oil

1 tbsp sea salt, coconut palm sugar, or organic garlic salt

Directions:

Add coconut oil to mason jar, melt in microwave.

Add sea salt, coconut palm sugar, or organic garlic salt.

Add in nuts and shake until well coated. Refrigerate or pour out onto parchment paper lined glass baking dish, refrigerate, place in jar.

Keep refrigerated.

Makes 10 servings

Nutrition Info (per serving)  – 200 calories, 21 g fat, 3 g protein, 4 g carbs, 2 g fiber

*I like walnuts, macadamia nuts, brazil nuts

Chick-Fil-A Announces Major Changes in 2014, Eliminating HCFS, Artificial Dyes, and Butane Derivative – The growing fast food company Chick-fil-A, boasting over 1,700 stores in 39 states, has announced major changes coming in 2014. Moving in the right direction, Chick-fil-A is preparing to change some of the ingredients used in their fast food. High-fructose corn syrup is the first ingredient to go, as the chain plans to remove the processed sweetener from their white buns. The franchise also plans to remove all artificial dyes from their sauces and dressings. Learn More.

Ghee: A Clarified Butter Rich in Essential Fats and Vitamins – Being pure, clarified butter, ghee is extremely rich in good fats. One serving (56 grams) of ghee contains 46 grams of pure fat, of which 29 grams are saturated. Moreover, these fats contain 179 milligrams of omega-3 fatty acids and 1,548 milligrams of omega-6 fatty acids, as well as butanoic acid and conjugated linoleic acid, which possess antibacterial and anticancer properties. We recently started offering cooking classes in Cincinnati to patients that are in treatment for obesity, and eating disorders such as anorexia, bulimia, bulimarexia, and binge eating disorder. Tamworth Hogs are a Heritage Breed of Pig

Categories of Swine

There are two major categories of swine breeds, paternal and maternal. Their offspring result in a mix of different qualities from the boar and the sow, and these are the qualities that farmers are trying to obtain when deciding which pigs to breed together.

Paternal Breeds

Paternal breeds are used for swine that will be raised for slaughter. The paternal breeds have qualities such as meatiness, leanness, and a high growth rate. Breeds include the Duroc, which has sweet meat and marbling that produces amazing shoulders and spare ribs, and the Berkshire, which has tender, juicy meat and a higher fat content, which means that it can withstand higher cooking temperatures or longer cooking times. The Hampshire is another paternal breed that is heavily muscled and lean, as is the Poland China.

Maternal Breeds

Maternal breeds are used as sows due to their nurturing tendencies. Maternal breeds tend to produce more milk, have larger litter sizes, and have a greater mothering ability. The three main maternal breeds are the Yorkshire, Landrace, and Chester White. The Yorkshire is the most recorded type of pig in the U.S. and the Landrace produces, on average, the largest litters of piglets.

Groups of pig breeds:

Lard Types: Poland Chinas, Cheshires, Essex, Mulefoots; have compact bodies, large hams, docile, and a heavier fat layer, although recent breeding has made them more similar to bacon and meat typing

Bacon and Meat Types: Landrace, Yorkshires, Tamworth; longer bodied and legs, trim profile, higher energy, less external fat.

Dual-purpose: Berkshires, Hampshires, Large Black (especially docile because of the large flopped ears), Saddlebacks.

There are demands for each breed by the market. Many hog growers practice cross breeding to get hybrid vigor in offspring. Information about the breeds and producers is available from the American Livestock Breed Conservancy.
