Keto Granola

I made granola for the first time, And if I do say so myself, it is absolutely amazing! Truth be told, it is a keto granola. But I think anyone would enjoy it. It is both crunchy and chewy at the same time. Go figure! It is loaded with collagen, vitamin C, protein, and chocolate.

Here you go:

DRY INGREDIENTS :
3/4  cup chopped macadamia nuts
3/4 cup raw or fermented chopped walnuts
1/2 Cup unsweetened shredded coconut
2 tablespoons hemp seed
2 tablespoons Chia seeds
2 tablespoons non-alkalized, Dutch processed cocoa powder
4 Scoops Garden of Life chocolate or plain collagen
1 tablespoon Kakadu Plum powder
1 tablespoon Camu Camu powder
3 tablespoons Monk fruit sweetener-powder
1/4 cup coconut flour 
2 teaspoons ground cinnamon
Pinch of sea salt
3/4 cup DON’T BE AFRAID OF THE BARK organic chocolate pieces chopped up into chip sizes or Stevia sweetened chocolate chips

WET INGREDIENTS:
2 large room temperature eggs 
6 tablespoons of cacao butter melted
1 tablespoon vanilla extract

Preheat oven to 275 and line a baking sheet with nonstick parchment paper

Combine all dry ingredients in a large mixing bowl and stir to evenly incorporate all ingredients

Keto Granola

In a small bowl mix together melted butter, vanilla and room temperature eggs until creamy

Add wet ingredients to dry and stir Until it becomes a sticky batter

Keto Granola

Add the batter to the lined baking sheet and form into a ball then top with another piece of parchment paper. Using a rolling pen spread the batter into an even layer approximately 1/2 inch thick

(Optional – Sprinkle with organic ground cinnamon)

Bake for 50 minutes.  Take out and let sit for 10 minutes, refrigerate for 25 minutes, and it’s ready to cut up and put into a storage container. Enjoy!
