What is it about lettuce that makes it such a divine alternative to bread? I made myself some tuna and egg salad, which has always been a favorite of mine since I was little, but since I stopped eating bread years ago, I have found Romain lettuce to be the perfect alternative to bread.
Disclaimer: I do love, and have always loved bread. There are two things I am addicted to, one of them is bread and the other is sugar. Sugar and flour go figure! So on the rare occasion that I do eat bread it’s going to be an organic sourdough, preferably one I have made myself.
But that is the rare occasion. In the main I do not eat bread. And I can honestly say that I don’t really miss it because I so much enjoy using Romain lettuce in its place.
Tuna and Egg Salad recipe:
4 or 5 hard-boiled eggs chopped
1/2 to 1 cup of tuna
1/2 cup chopped celery
1 diced pickle
Chopped onion is optional
1/2 cup Primal Kitchen avocado mayonnaise
1 tablespoon Primal Kitchen chipotle mayonnaise mixed together
Spread the mixture once it’s all blended together on Romain lettuce and enjoy!
