Truffle Stuffed Portobello Mushrooms
Ingredients
4 large portobello mushroom caps – washed and dried
1 cup hulled hemp (or 1 cup cooked quinoa)
1 cup organic sprouted Mung Beans
1 cup bone broth
3 TBS. coconut oil
½ onion – diced finely
½ cup celery – diced finely
1 cup organic mushrooms – diced finely
1 capful garlic juice (or 4 peeled garlic cloves smashed to a paste)
1 lb. ground bison, beef or turkey
1 cup shredded raw organic smoked cheddar cheese
Pinch bourbon smoked paprika
Pinch sea salt
Pinch truffle salt
Directions
1. Preheat oven to 350 degrees.
2. Prepare hemp (or quinoa) and mung beans according to directions using bone broth instead of water. Mix together and set aside.
3. Saute onion, celery, mushrooms, spices, garlic and protein together in coconut oil until protein is no longer pink.
4. In a large bowl, toss hemp (or quinoa) and mung bean mixture with protein mixture; stir-fry together quickly.
5. Arrange mushroom caps on a sheet pan. Stuff with combined mixture. Bake in 350 degree oven for 20 to 25 minutes.
6. Remove mushrooms and top with shredded smoked cheddar cheese. Return to oven until cheese has melted. Serve hot.

During the classes, participants pick up basic cooking tips for preparing “clean” luscious tasting dishes, dressing, marinades, desserts and soups. 1 cup snowville whole milk or half and half (or another grassfed, organic, lightly pasteurized brand)
1/4 c hulled organic hemp seeds
1 tbsp organic chia seeds or ground organic flax seeds
1 tsp cinnamon
1 tsp organic pure vanilla
2/3 c organic frozen fruit (mango, peaches, cherries, blueberries etc or a combination)
1/2 green-tipped organic banana, sliced
chopped organic nuts, I like walnuts, almonds, macadamia nuts
1-2 tbsp organic cashew butter
1 tbsp raw hulled hemp seeds, chia seeds, or raw buckwheat groats
Coconut nectar, coconut crystals (optional, I find its sweet enough without this).
In a medium sauce pan, bring milk to a simmer. Add in 2 tbsp hemp seeds, 1/2 tbsp ground flax, cinnamon, vanilla. Stir.
Simmer for 5 minutes, stirring occasionally. Add in fruit and simmer for 5 more minutes.
Turn off heat. Stir in remaining hemp seeds and flax seed meal.
Pour half of the porridge into a mason jar. Layer sliced bananas and nuts. Pour remaining porridge into jar. Top with cashew butter, hemp seeds or chia seeds, coconut sugar/coconut nectar (optional).
Serves 2.

6 fresh organic beets
Salt
1 cup balsamic vinegar
2 tbsp olive oil
2 tsp garlic juice
1 tbsp coconut palm sugar

1 cup ground jovial foods ginger cookies (or organic sour dough dried out bread)

Macaroni and Cheese
Ingredients
1/2 pound Jovial Foods elbow macaroni – or an Italian Non-GMO macaroni
3 tablespoons grass-fed butter
3 tablespoons Jovial foods flour
1 tablespoon mustard
2 1/2 cups Traders Point or Snowville full fat milk
1/2 cup Kalona Sour cream
1/2 teaspoon paprika
1 large egg
12 ounces sharp raw cheddar, shredded
1 teaspoon organic sea salt
black pepper
Directions
Crumb Topping:
1 cup organic hemp florets
1/2 cup herbed goat cheese
1/4 cup warm grass-fed butter
garlic pepper& garlic salt to taste

This recipe for quiche has a cauliflower crust that is awesome, and it is loaded with good fat and gluten free!
Gluten-free Bacon (or Mushroom) Quiche Crust
Ingredients:
2 cups grated cauliflower* (Use stems of florets, but not green parts The easiest way to grate cauliflower is to do it in a food processor using the grating blade. If you do not have one, a cheese grater works. The idea is to use as much of the head as possible. It should look like snow when you are done.)
2 eggs
1 cup organic coconut flour
a pinch of salt, pepper, italian herbs
1/2 c shredded organic, grassfed mozzarella or provolone cheese (grate your own please)
1/2 c grassfed butter
1/2 Trader’s Point Whole Milk, or any raw/lightly pasteurized, organic, grassfed milk
1 cap of garlic juice
Bacon (or Mushroom) Filling
8 ounces bacon, cut into 1/2-inch pieces (or 1 cup diced mushroom caps plus butter for sautéing)
1/2 onion, diced
Salt, pepper, Bourbon-smoked Paprika
1 cap garlic juice
6 large eggs
1 cup Trader’s Point full-fat milk (or Snowville heavy cream), or raw/lightly-pasteurized organic grass-fed milk/cream
1 cup shredded cheese
Makes 8 servings.
